Low Fat Quinoa and Edamame Salad
A decent low fat serving of mixed greens formula to attempt !
Low Fat Salad Ingredients:
1 cup uncooked quinoa, washed
2 cups sans fat, low sodium vegetable stock
1/2 cup depleted simmered red peppers, cleaved
2 roma tomatoes, cultivated and slashed
1 little zucchini, divided the long way and cut
1 cup frozen edamame, defrosted
Zing of 1 enormous lemon
3 tbsp lemon juice
2 tbsp olive oil
1/4 cup new level leaf parsley, slashed
Low Fat Salad Instructions:
Toast uncooked quinoa in a medium skillet for 5 minutes. Move quinoa to an enormous pot, add vegetable stock and brinf to a bubble. Cover and lessen hotness, and cook for 15 minutes or until the water is ingested and the quinoa is soft. Eliminate from hotness and void into a serving bowl.
Add slashed peppers, tomato, cut zucchini and defrosted edamame. Mix well.The low fat plate of mixed greens is prepared to serve....enjoy it !
