Low Fat Quinoa and Edamame Salad
A nice low fat salad recipe to try !

Low Fat Salad Ingredients:
  • 1 cup uncooked quinoa, rinsed
  • 2 cups fat-free, low sodium vegetable broth
  • 1/2 cup drained roasted red peppers, chopped
  • 2 roma tomatoes, seeded and chopped
  • 1 small zucchini, halved lengthwise and sliced
  • 1 cup frozen edamame, thawed
  • Zest of 1 large lemon
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 cup fresh flat leaf parsley, chopped
Low Fat Salad Instructions:

Toast uncooked quinoa in a medium skillet for 5 minutes. Transfer quinoa to a large pot, add vegetable broth and brinf to a boil. Cover and reduce heat, and cook for 15 minutes or until the water is absorbed and the quinoa is fluffy. Remove from heat and empty into a serving bowl.
Add chopped peppers, tomato, sliced zucchini and thawed edamame. Stir well.The low fat salad is ready to serve....enjoy it !

  • 3 tablespoons honey
  • 1/3 cup fresh lemon juice
  • 5 tablespoons mayonnaise

Stir together 1 cup of lemon juice, 1/4 cup of honey, lemon zest, and parsley in a bowl until the honey has dissolved. Add the halved grapes, toss to coat, and set aside.
Whisk together grape juice, 3 tablespoons of honey, and 1/3 cup of lemon juice until the honey has dissolved. Whisk in the mayonnaise until smooth. Pour this dressing over the grapes, toss to coat, and this low fat salad recipe is ready to serve...enjoy the salad !

Ingredients
• 1 1/2 cups dry white wine
• 1 1/2 cups water water
• 9 tablespoons sugar
• 6 ginger root slices, about the size of a quarter
• 2 medium nectarines, pitted and thinly sliced
• 2 medium peaches, peeled, pitted and thinly sliced
• 1 1/2 pints fresh raspberries
• 6 medium fresh figs, quartered

INSTRUCTIONS
Combine wine, water, sugar and ginger in medium saucepan. Simmer over medium heat until reduced to 2 cups. This takes about 16 minutes. Cool. Refrigerate until cold, about one hour. Remove and discard ginger slices.

Place fruit in a large bowl. Add syrup and toss to coat. Cover and chill at least 2 hours but no longer than four hours before serving. The low fat salad is ready to serve...enjoy it !
